Four rooms

Cocktails, white wine, red wine and champagne are live. Each room is the same idea: a two-axis flavour wheel, pins you can actually hit, filters that don’t reset the last room you were in.

The cocktail wheel

Four poles: Fruity (northwest), Sweet (northeast), Sour (southwest), Bitter (southeast). Placement comes from four scores, not from a spirit category. A Paloma sits with grapefruit and fizz; a Negroni sits with Campari.

Bitter here means a potable bitter — amaro, peel, quinine, gentian — not coffee roast or char. Espresso Martinis live in Sweet.

The white-wine wheel

Four poles: Crisp & green, Aromatic & floral, Lean & mineral, Rich & ripe. Dryness is a filter, not a pole — Chablis and Napa Chardonnay are not the same pin, and a Kabinett is not a Trocken.

The red-wine wheel

Four poles: Fresh & juicy, Ripe & spicy, Lean & earthy, Dark & grippy. Dryness and oak are filters, not poles — Fleurie is not Barolo, and Gevrey is not a Central Otago Pinot. A later Low tannin chip reads off grip.

The champagne wheel

Four poles: Fresh & citrus (northwest), Toasted & brioche (northeast), Lean & chalk (southwest), Ripe & orchard (southeast). Dosage is a filter, not a pole — Ultra Brut and a Pinot house wine are not the same pin. English traditional-method bottles sit on the same map as shape-shifters, not as a fifth country.
